Sophos Anti Virus - Because you can never be too careful!
Fantastical - I use this to simplify my iCal workflow, especially for school.
smcFanControl - This keeps my Mac cool during processor intensive activities. I have several preset speeds that I choose based on what I’m doing. It also boosts the fan speed by 750RPM while my Air is charging.
Ejector - I use this especially on my MacBook Air to make removing my external disks simple.
FreeMemory - I have this set to automatically purge my inactive RAM whenever it drops below a certain level. Keeps my Air smooth and responsive.
Dropbox - Self explanatory. Also, awesome.
BwanaDik - Keeps tabs on my current Wi-Fi situation. More informative than the built-in menu app.
MenuPrefs - Simplifies changing the System Preferences.

CloudApp - For quick sharing of small items between my Macs and friends
Evernote - For jotting down stuff I want to remember
- Displays the weather in really nice HD graphics, and the menu bar app drops down a list of current temps for selected cities.
Caffeine - Keeps my Mac running high.
Then the standards: Keychain Access, Time Machine, Bluetooth, Battery, Wi-Fi, Volume, Date/Time, and Spotlight.

smcFanControl - To make sure that my old Macbook is not gonna stop brutally due to those annoying Websites still using Flash.
Dropbox - A must have.
TextExpander - I mostly use Markdown, HTML and date replacement snippets.
Cloud App - Very neat tool to easily upload screenshots and files.
Hazel - Great tool to rename and sort files in my Downloads folder but also to sort my Dropbox files when they get automatically on my computer thanks to services such as SendtoDropbox or DropItTo.
SlimBatteryMonitor - A neat app to replace the default Mac Battery icon, I only need to know the percentage of remaining battery, not the logo. Besides I am usually already aware of the fact that my battery is charging thanks to the red light on the charger.
- To keep a log of my copied items.
Caffeine - Very convenient when Skyping or watching videos in a browser.
Sound, Bluetooth, Wi-fi, Clock and Spotlight - The basics. I have the Bluetooth there only because I use a Bluetooth earset.

smcFanControl - A tool that allows me to adjust the fans on my Macbook Pro. Useful when Photoshop is making the computer very hot!
Teleport - A tool that allows me to control my Mac Mini that sits right next to my MBP in a sort of dual screen environment.
Caffeine - Great tool to keep your computer awake without having to go into settings each time!
Time Machine - Back ups of my computer.
Bluetooth - Wireless keyboard and trackpad.

BetterTouchTool to make my trackpad more effective, iAntivirus, because I’m paranoid, smcFanControl, to keep my Macbook Pro from catching on fire, LogMeIn for all those times I need to remote desktop in. Bluetooth (disabled), iStat Menus for battery notifications, Wi-Fi, Volume, iStats Menus for time, and then Spotlight.
