First a disclaimer: We develop applications for Mac and we have done a few for the menu bar that I use daily, so I will include them.
Gnotifier: A Gmail and Google account notification system for multiple accounts (mail, calendar and documents). I’ve set it to check my personal Gmail account and two company accounts that are hosted on Google Apps. We didn’t find a solution for that, so we developed it :).
The 3 next icons are CPU LED. (Using the well known red, yellow and green colors, all the leds indicate the status of some important part of your Mac). First, Disk Usage, then CPU Usage, and lastly Memory Usage.
The next one is Adium. Having to answer chats from multiple networks, that was an easy choice.
Next, my second app to be installed on my Mac: Dropbox. Full Sync Backup Cloud Storage. No more words.
And then the last icon and the first app that I use every single day. We created it after suffering tons of lost time from missing some important piece of info: Clipboard History. A clipboard history manager with tons of features and loved by thousand of happy users.

Sparrow - Super simple email client, the closest (and best) thing you can get to native Gmail on the Mac. It’s got a one up on Mail.app as well since it actually has a menubar icon.
Adium - MSN is still my protocol of choice and since Microsoft Messenger is horrible on the Mac I use Adium, fitted out with a nice iChat style menubar icon which you can find over at adiumxtras.com.
Tweetie - I’m still stuck on PowerPC, so Tweetie is my best option. Pity me. It may not be the best, but it’s still a solid choice even now.
Dropbox - Self explanatory super sync’y goodness.
Keyboard Maestro - A powerful macro program I’m playing with before I bite the bullet and buy it. I use an amazing alternative menubar icon made by Jono Hunt over at Iconaholic.
Pastebot Sync - More super sync’y goodness. Lets me get copied items to and from my iPod Touch and my Mac easily.
Built in stuff - LsSaAlerter (I have no idea how to get rid of it), AirPort, Volume, Time and Spotlight (I can’t get rid of it either so it just sits there, Alfred is my choice of launcher instead).

Disk Drill - data recovery software and S.M.A.R.T. monitor.
F.lux - better lighting…for your computer, great software.
Avast - cause you never know, this is beta and it’s free.

: For my TV shows delight. It automatically downloads the .torrent file and opens my torrent download client when a new favorite show appears in the net.
Adium: My favorite IM client. Using the Marten-Plain White menu bar icons set.
Sparrow: Best desktop Gmail client. Period.
Skitch: I love Skitch for quick capturing and sketch notes. I use in conjuntion with Droplr (see below) because I prefer a shared image page without much clutter.
Alfred: Applications launcher on steroids. I really like the command customization, and the Powerpack rocks!
Dropbox: Should I describe it?
Droplr: It let you store images, files, texts and short URLs by just dragging anything to the menubar icon. I mostly use it with Skitch to capture -> drag -> get link.
PasteBot: Copy and paste directly to my iOS devices.
: Only for quickly adding events/reminders to my Google Calendar, I don’t use the Gmail notifier because Sparrow manages it just fine.
Typinator: A really useful text expander tool, for quick snippets and signatures.
MagicPrefs: Enhanced functionality for my Magic Mouse and Macbook Pro trackpad. Haven’t tried other alternatives, but it works amazingly.
Evernote: Love to have everything stored in one place. Even my bills and tickets. Syncing with all my devices is the best thing.
Caffeine: Because my Mac also needs a dose.
: Very cool alarm clock with nice features like use your own music, and less intrusive than Awaken. And best of all, free!
Radium: Best online radio player for Mac. Only lives in your menubar, no useless windows. Just plays the radio and also scrobbles to Last.fm.
And the Apple ones: Time Machine, Bluetooth, Airport, Sound, Battery, Hour and Spotlight.
