Here are few things, that I have hidden from the menu bar — there is way too much stuff already:
Alfred - quick access / search anything
TextExpander - replaces texts while typing for quick text typing
Moom - window management tool
Witch - replaces Cmd+Tab with extended features (mainly restores minimized windows when switching)
TotalFinder - extend Finder functionality
Visor - docks terminal Quake style

Twit Menulet: By far the easiest and best way to stay up to date with Twitter. Scrolls tweets in the menu bar and is highly configurable, including width, font size, etc.
BOINCManager: Donates idle computer times for research of illnesses & diseases. Since it runs when your computer idles, it doesn’t affect your computing at all, but it DOES have far reaching consequences. Visit BOINC for details!
: Keeps my desktop clean, automagically.
Little Snitch: Spiffy firewall with network stats.
Camouflage: Hides desktop icons, for the times when you just want to see your wallpaper in all its glory. Easy on the eyes!
Jumpcut: Clipboard history manager.
Evernote: Don’t think this one needs an introduction :)
LogMeIn: Honestly, would love to get rid of this icon, but don’t know how to. Used to access my desktop remotely when I’m on the move.
MenuCalendarClock: More attractive and useful replacement for the standard date and time. Pops up the monthly calendar on a click. Paid version syncs with iCal as well.

I use Adium. I like Adium. I need Adium. Then, from left to right: CalendarBar (shows iCal and Facebook events as well as birthdays), Dropbox (icon seems not to be disableable), Espionage (password encryption for single folders), Jumpcut (Clipboard history with perfect system integration), Little Snitch Monitor (firewall), LittleSnapper (screenshots), WiFi, Time Machine (currently running…), Battery, Keyboard (ugliest icon ever produced by Apple), Clock, Hotspot Shield (Germans also want to use Hulu…), and Spotlight.

My menu bar is not so radical, I like to have the original Battery, AirPort and Bluetooth icons… but for me Dropbox, CloudApp and are also must haves. The other useful icons are Jumpcut, Little Snitch and of course some from iStat Menus (Network monitor, CPU monitor, and the battery percentage).

I see most of the menu bars are quite short, so I’ve decided to submit mine:
xScope - To measure stuff on the screen when designing.
BetterTouchTool - The #1 utility if you own Magic Mouse / Magic Trackpad or MacBook.
Adium - #1 Mac Chat software. Allows me to stay in touch with my team via .
OmniFocus - The best GTD Mac software, I use it to keep my to dos and keep them synced between devices.
Pomodoro - Best Pomodoro Technique timer to stay productive by splitting task into chunks.
Emcee - Answers the “What’s playing?” question (Bit crazy that it’s $3 now, I got it for free before the Mac App Store).
Radium - Sometimes I just want to listen to something without bothering too much.
- To watch my stuff on iPad in bed.
Droplr - To quickly share screenshots with my team and other people in Adium.
Blast - Allows me to quickly access files and folders just changed.
Dropbox - Everybody knows Dropbox, right? Sync files between computers, devices and share with people.
Launch it! - Allows me to launch apps with a single hotkey. A very missing feature in Mac OS X.
Little Snitch - Firewall.
Size Up - To control windows from the keyboard. I am proud to say that I helped to develop it.
Evernote - Notebook synched between devices.
iStat Menus - RAM, CPU Temp, Fan Speed and CPU Load.
Time Machine, Bluetooth, Airport, Volume, Language - Built-in Mac OS X tools.
iStat Menus - Again this time to replace the flawed Mac OS X clock, this one gives me calendar access when I click it, not to mention a nicer menubar layout.
Fast Users Switching - Built-in.
Also I have KeyRemap4MacBook running to remap some buttons on the keyboard. Actually I switch Keyboard Layouts using single left/right shift presses and remap cmd-space to cmd-shift-space to get rid of that awful Snow Leopard language swtich. The icon for KeyMap is removed from the menubar because it has a nice Preference Pane built-in.
Phew. That’s about it.

I try to keep my menubar clean. File uploaders and the weather live in Dashboard.
Dropbox – if MobileMe were half as good as Dropbox, I’d be using (and paying for) it instead.
Little Snitch – I like knowing what applications are connecting to the internet, and where to.
Synergy – unobtrusive, reliable Last.fm scrobbling.
Plex – transcodes and streams my movies and TV shows to my iPhone/iPad in real-time.

iStat Menus Network - Having actual KB/s speed numbers has proved very useful over the years
Airport - Always want to know Wi-Fi signal strength!
